Why it works: Milk and lemon are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 19,053 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓

Milk Jelly

Ingredients

Directions

Make the jelly

  1. Weigh the gelatin and place it in a saucepan with the milk.

  2. Add the sugar and the thinly peeled yellow rind of the lemon.

  3. Stir the mixture over moderate heat until the gelatin is melted.

  4. Strain the mixture into a basin and stir occasionally until cool.

Mould and serve

  1. Mould the jelly in prepared moulds and place in a cool area to set.

  2. For glass and china moulds, dip them in cold water; for tin moulds, scald them and then place in cold water.

  3. To serve, quickly dip the moulds in hot water and turn the jellies onto a dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the body of the jelly and carries the flavour.
Gelatine
Sets the liquid into a firm, wobbly structure as it cools.
Loaf sugar
Adds sweetness and balances the flavour of the milk.
Lemon rind
Adds aroma from its oils without adding juice or sourness.

The step that matters

Stirring until the gelatine is fully melted. Gelatine that is not fully dissolved will leave grainy specks and weak set spots. Gentle, moderate heat dissolves it without boiling the milk, which can scorch or form a skin.

Swap the lemon

How well each one fits the dish's main ingredients (milk, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits better

Fit is the average pairing score against milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
