Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Eggs
Add body and a creamy texture to the clear lemon liquid when gently heated.
Loaf sugar
Sweetens the jelly and balances the sharpness of the lemon.
Lemons
Provide the main lemon flavour and acidity through their juice and rind.

The step that matters

Stir the mixture over medium heat until the gelatin is melted. Gelatine must fully dissolve for the jelly to set evenly. Overheating or boiling can weaken its setting power, and the eggs can scramble if the heat is too high, so gentle, steady heat is needed.
