What each ingredient does

Prawns or shrimps
Provide the main shellfish flavour and the meat that is pounded into the butter.
Butter
Carries the shellfish flavour and gives the finished spread its rich, creamy texture.
Powdered mace
Adds a warm, aromatic spice note to the butter.

The step that matters

Let it cool before mixing in the cold butter. Butter is a fat that softens and separates when hot. Letting the mixture cool first keeps it from melting the fresh butter, so the spread stays firm and creamy.

Swap the mace

How well each one fits the dish's main ingredients (shrimp, butter):

  1. Garlicfits better
  2. Capersfits better
  3. Parsleyfits better
  4. Macethe original
