Ingredients

Directions

Prepare the mould

  1. Butter a mould and line the inside with Savoy biscuits, moistening the edges with beaten egg white to hold them together.

  2. Arrange the biscuits upright around the sides, slightly overlapping, and cover the bottom with biscuits in a star or rosette pattern.

  3. Set the mould in the oven to dry.

Make and set the filling

  1. Whisk the cream with Vanderhum, dissolved isinglass, and loaf sugar to taste until firm.

  2. Fill the inside of the Charlotte Russe with the cream mixture and place a slice of sponge cake on top.

  3. Set it in a cool place or on ice until cold, then cover with cream and decorate with chocolates, sprinkles, or crystallized cherries.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Savoy biscuits
Form the outer shell and hold the cream filling in shape.
Good cream
Provides the rich body and fat that whisk into the light, firm filling.
Isinglass
Gelatin-like setting agent that firms the cream as it cools.
Loaf sugar
Sweetens the cream filling.
Vanderhum
Adds flavour to the cream filling.

The step that matters

Set the mould in the oven to dry. Drying the biscuits in the oven helps them become crisp and firm, so the shell holds its shape and does not soften when the cold cream is added.
