Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Eel Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Clean and prepare the eels, cutting them into pieces.

  2. Make a pastry and line a pie dish with it.

  3. Layer the eel pieces in the pastry.

  4. Season with salt, pepper, and nutmeg.

  5. Dot with butter and add a little water.

  6. Cover with more pastry and seal the edges.

  7. Bake in a moderate oven at 350°F (175°C) until golden brown.
