Peas Soup

Ingredients

Directions

  1. Break the bones and place them in a pot with 4 quarts of cold water.

  2. Add 2 to 3 pounds of split peas, carrots, turnips, onions, celery, thyme, and peppers.

  3. Bring to a boil and cook for 2 hours, stirring frequently to prevent burning.

  4. Once the peas are soft, strain the soup through a sieve into another pot.

  5. Rub the peas through the sieve to mix the pulp with the soup.

  6. Add salt dissolved in a little water and boil for a few more minutes.

  7. Serve with small square pieces of toasted bread in the tureen.
