Ingredients

Directions

Make the broth

  1. Bring 2 quarts of water to a boil.

  2. Add 3 pounds of mutton or lamb, trimming excess fat.

  3. Add 2-3 carrots, 2 grated turnips, 3-4 sweet young turnips, 1 cauliflower, 1 lettuce, a few shredded young onions, and a little parsley.

  4. Boil for 1.5 hours.

Add the peas and serve

  1. Remove the meat, cut it into chops, and set aside.

  2. Add another pint of young peas, seasoning with pepper and salt.
