What each ingredient does

Celery
Forms the bulk of the sauce and supplies its main vegetal flavor and body.
Butter
Adds fat for richness and carries flavor through the sauce.
Milk or cream
Adds moisture and a smooth, creamy texture to the sauce.

The step that matters

Bringing the sauce to a boil. Milk or cream can curdle or separate when it boils hard or boils over, so heat it carefully and watch it closely until it reaches a boil.
