Dressing Fish

Ingredients

Directions

Prepare the fish

  1. Soak the fish in cold water mixed with a little milk (winter) or lay the fish on ice (summer).

  2. Make a 3-inch incision in the center of the back.

  3. Cut bones on each side and remove joints to prevent breaking during boiling.

  4. Tie the mouth with packthread.

  5. Rub the belly with lemon juice, cover the fish with lemon slices, and sprinkle the fish with salt.

Cook

  1. Place the fish in a kettle half-filled with hot water over a quick fire, covered with a napkin.

  2. When the water boils, skim the surface and remove the fish from the fire.

  3. Cover the fish with ashes to simmer for 1.5 hours.

  4. Wash the fish with the boiling water and untie the head of the fish.

Serve

  1. Slide the fish onto a napkin in a fish dish.

  2. Serve the fish with boiled potatoes shaped like large olives.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turbot
Firm, white flesh that holds together during gentle poaching and forms the main dish.
Lemons
Acidity and aroma that brighten the mild flesh of the fish.
Potatoes
Starch that soaks up flavor and gives a soft, floury contrast to the fish.

The step that matters

Simmer the fish gently under ashes for 1.5 hours. Gentle, steady heat cooks the fish evenly and keeps the flesh tender and intact. Hard boiling toughens the proteins and can break the fish apart.

Swap the lemon

How well each one fits the dish's main ingredients (turbot, potato):

  1. Lemonthe original
  2. Coconutfits about as well
  3. Limefits less well
