Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten whites add foam and light structure that the cream sets around.
Egg yolk
Yolk thickens the mixture and gives the cream its richness when heated.
Loaf sugar
Sugar dissolves into the hot water to sweeten and balance the lemon's acidity.
Lemon juice
Juice supplies the sharp acidity and bright flavour of the cream.

The step that matters

Boil for 5 minutes, stirring constantly. Egg proteins thicken as they heat, but if the mixture boils unevenly or is left unstirred, parts can scramble or curdle. Constant stirring keeps heat even so the cream thickens smoothly.
