Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Soften into a sweet, mild base that gives the sauce its body and flavour.
Butter
Adds richness and carries flavour while the onions cook gently.
Velouté
Thickens the sauce so it holds together rather than running thin.
Cream
Adds smoothness and richness, mellowing the onion flavour into a silky sauce.

The step that matters

Cooking the onions until soft and translucent. Onions cooked gently over low heat release their sugars and soften fully. Rushing this leaves harsh, sharp flavour and fibrous pieces that the sieve cannot fully remove.

Flavor stand-ins for the nutmeg

How well each one fits the dish's main ingredients (onion, butter, cream):

  1. Garlicbetter flavor fit
  2. Nutmegthe original
  3. Capersabout as good a flavor fit
  4. Celeryabout as good a flavor fit

Fit is the average pairing score against onion, butter, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
