Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Best truffles
Main ingredient whose earthy aroma flavours the cooking liquid.
Slices of bacon
Lines the pan and adds savoury fat that flavours the truffles as they cook.
2 glasses champagne
Acidic liquid that moistens the truffles and carries their aroma during gentle cooking.
1 tablespoon good consomme
Adds savoury meaty depth to the cooking liquid.

The step that matters

Boil gently for one hour. Truffles are delicate, so a hard boil can toughen them and drive off aroma. A gentle simmer keeps them tender while the liquid infuses their flavour.
