Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the liquid as its starch swells and sets into a clear jelly when cooled.
White wine
Adds acidity and aroma to the finished jelly.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.

The step that matters

Boiling until transparent. Tapioca starch must be cooked long enough at a gentle simmer for the grains to fully swell and turn clear; undercooked starch stays cloudy and grainy and will not set properly.

Swap the nutmeg

How well each one fits the dish's main ingredients (lemon, sugar, white wine):

  1. Marjoramfits better
  2. Thymefits better
  3. Tarragonfits better
  4. Nutmegthe original

Fit is the average pairing score against lemon, sugar, white wine. Candidates are from the same food group and used in at least 100 recipes.
