Duck Pie

Ingredients

Directions

  1. Cut off the wings and neck of the duck and boil for 15 minutes.

  2. Cut the duck into pieces while hot and save the gravy.

  3. In a pot, combine giblets, anchovies, butter, mace, peppercorns, onions, toasted bread, herbs, and cayenne pepper.

  4. Stew until the butter melts, then add boiling water and cook until giblets are tender.

  5. Strain the mixture and place giblets in the pie dish.

  6. Let the gravy cool, skim off the fat, and add it to the dish with the duck pieces.

  7. Season the duck with salt and pepper, add butter lumps, and cover with pastry.
