Why it works: Nutmeg and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Indian Meal Puffs

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. Boil the milk in a pot.

  2. Gradually stir in the Indian meal, powdered sugar, and grated nutmeg. Continue stirring and let it boil for 15 minutes.

  3. Remove from heat and let it cool.

Add the eggs

  1. Beat the eggs until light and fluffy. Once the mixture is cool, gradually stir in the beaten eggs.

  2. Butter some large teacups and nearly fill them with the mixture.

Bake and serve

  1. Bake in a 350°F (175°C) oven until well done.

  2. Serve warm with butter and molasses, or with butter, sugar, lemon juice, and nutmeg stirred to a cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the meal cooks into a thick, custard-like batter.
Indian meal
Cornmeal thickens the boiled milk and gives the puffs their body and texture.
Eggs
Set during baking to give structure and lift, so the puffs hold their shape.
Powdered sugar
Sweetens the batter and helps brown the surface as it bakes.

The step that matters

Let the mixture cool before adding the eggs. Hot batter would start cooking the eggs unevenly and could scramble them, so they would not blend smoothly or rise well in the oven.
