Baked Herrings and Sprats

Ingredients

Directions

The book says “a quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash and drain the herrings and sprats without wiping them.

  2. Season with ground allspice, coarse sea salt, and whole cloves.

  3. Lay them in a pan with plenty of black pepper, an onion, and a few bay leaves.

  4. Add ½ cup of vinegar.

  5. Bake in a moderate oven at 350°F (175°C) until cooked through.
