Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Boil, peel, and mash the potatoes until fine.

  2. Mix the mashed potatoes with salt, pepper, and butter.

Assemble and bake

  1. Roll out the puff pastry thinly.

  2. Place the potato mixture on one half of the pastry.

  3. Fold the other half over and pinch the edges to seal.

  4. Bake in a moderate oven at 350°F (175°C) for about 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk and soft, moist body of the filling.
Butter
Adds richness and fat that makes the mashed filling taste smooth and savoury.
Puff pastry
Forms the flaky, layered outer case that rises and browns in the oven.

The step that matters

Pinch the edges to seal. If the pastry edges are not sealed firmly, the filling can leak out during baking and the pasty may open or dry out.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter):

  1. Capsicumfits better
  2. Potatothe original
  3. Carrotfits less well
  4. Onionfits less well

Fit is the average pairing score against pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
