Why it works: Cucumber and onion match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 6,050 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

To Stew Cucumbers

Ingredients

Directions

Prepare

  1. Slice cucumbers thick or halve them.

Stew

  1. In a pot, combine salt, pepper, sliced onions, and a little broth or butter.

  2. Simmer slowly.

  3. Add butter if not used earlier.

  4. Add a little flour; if butter was used, add only a little flour unless more richness is desired.

  5. Pour on broth or gravy and stew until done.

  6. Skim off the fat.

Alternative method

  1. Alternatively, slice onions and cut cucumbers large, flour them, and fry in butter.
