Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the mixture as they heat, setting it into a smooth, rich cream.
Sugar
Sweetens the lemon juice and helps balance its sharpness.
Lemons
Provide the juice and peel that give the cream its sharp, fragrant flavour.

The step that matters

Set over gentle heat and stir until thick and hot, but not boiling.. Egg yolks thicken through gentle heating, but if the mixture boils the proteins curdle and the cream turns grainy. Low heat and constant stirring keep it smooth.
