Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Forms the body of the dish and gives it a rich, smooth texture.
Isinglass
Sets the mixture, giving it a firm, jelly-like structure when chilled.
Raspberry juice or syrup
Adds the main raspberry flavour and colour.
Sugar
Sweetens the dish and helps draw juice from the raspberries.

The step that matters

Add milk after the cream. Adding milk after the cream helps prevent curdling, since the dairy proteins are less likely to separate when the mixture is well mixed and not shocked by a sudden change.

Swap the raspberry

How well each one fits the dish's main ingredients (cream, sugar, milk, brandy):

  1. Vanillafits better
  2. Strawberryfits about as well
  3. Apricotfits about as well
  4. Raspberrythe original

Fit is the average pairing score against cream, sugar, milk, brandy. Candidates are from the same food group and used in at least 100 recipes.
