Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal sweetbread
Forms the savoury, tender body of the stuffing.
Egg yolk
Binds the chopped ingredients together so the stuffing holds its shape.
Oysters
Add a briny, savoury flavour to the stuffing and the body cavity.
Mushrooms
Add moisture and earthy savoury flavour to the stuffing.

The step that matters

Lifting the breast skin without tearing it. The stuffing must sit between the skin and the flesh, so a torn skin lets the filling leak out during roasting and leaves the breast unevenly covered.
