Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Eel Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eels

  1. Skin, gut, and wash the eels thoroughly.

  2. Cut the eels into pieces about 1.5 inches long.

Season and assemble

  1. Season the eels with pepper, coarse sea salt, and dried sage.

  2. Place the seasoned eels in a dish and add enough water to just cover them.

  3. Make a puff pastry crust and cover the dish with it.

  4. Dot the top with butter and season with pepper and salt.

Bake

  1. Bake in a quick oven at 400°F (200°C) until the crust is golden, being careful not to burn it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eels
Provide the main protein, which becomes tender and flavorful as the pie cooks.
Puff pastry
Forms a flaky, buttery crust that seals the dish and browns in the oven.
Butter
Adds richness and helps the crust brown as it bakes.
Dried sage
Adds an earthy, aromatic flavor that complements the fish.

The step that matters

Baking until the crust is golden without burning. Puff pastry relies on steam from its layers of butter to rise and flake, and it browns quickly through sugar and proteins. Too much heat or time scorches the crust before the eels are fully cooked through.

Swap the sage

How well each one fits the dish's main ingredients (pepper, butter):

  1. Parsleyfits better
  2. Sagethe original
  3. Thymefits about as well
  4. Tarragonfits less well

Fit is the average pairing score against pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
