What each ingredient does

Sweetbreads
Provide a tender, delicate meat that browns well when floured and fried.
Egg yolks
Thicken the sauce as they set gently, giving it a smooth, rich body.
Drawn gravy
Forms the liquid base of the fricassee, carrying flavour and moisture through the stew.
Oysters
Add a briny, savoury depth that is softened and enriched by frying and stewing.

The step that matters

Stirring in the egg yolks. Egg yolks thicken when heated gently, but if the mixture is too hot they can scramble and curdle. Add the beaten yolks off the heat or over low heat while stirring constantly to keep the sauce smooth.
