To Pot Pigeons, or Any Other Fowl

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Season the trussed pigeons with savoury spice.

  2. Place them in a pot and cover with butter.

  3. Bake at 400°F (200°C) until cooked through.

  4. Remove from the pot and drain.

  5. Once cooled, cover the pigeons with clarified butter.
