Potatoes

Ingredients

Directions

  1. Wash the potatoes thoroughly and cut off a small piece of the peel.

  2. Place the potatoes in a saucepan with cold water.

  3. When the water begins to boil, add ½ cup of cold water.

  4. Repeat adding cold water each time it boils until the potatoes are fully cooked.

  5. Drain the water and sprinkle a handful of coarse sea salt over the potatoes.

  6. Cover with a clean, soft cloth and let them dry by the fire.

  7. For a German variation, peel and slice the potatoes, boil them until soft, then mash with salt, pepper, nutmeg, and chopped parsley.

  8. Mix in beaten egg yolks, form into balls, and fry in butter or oil until golden brown.
