To Preserve French Beans, or Scarlet Beans
Ingredients
Directions
Make a strong brine that can float an egg.
Let the brine cool, then add whole, sound beans, ensuring they are fully submerged.
Store the beans in the brine for up to 12 months.
When ready to use, remove the desired amount of beans and soak them in cold water, changing the water frequently for 10 to 14 hours.
Cook the soaked beans as you normally would; they will taste fresh.
