A Turkey

Ingredients

Directions

  1. Carve slices off the breast of the turkey, starting from the top and going through the forcemeat.

  2. Remove the flesh from the wings in a similar manner.

  3. Carve the breast across nearly to the back, but do not completely separate it for better presentation.

  4. After carving the breast, remove the pinions and legs by cutting at the joints.

  5. Score the gizzard and broil it, seasoning with cayenne and coarse sea salt.

  6. Serve a slice of liver with the turkey.
