Excellent Horseradish Sauce

Ingredients

Directions

Prepare the horseradish

  1. Wash and wipe the horseradish, then scrape off the outer skin.

  2. Grate the horseradish as finely as possible.

Make the sauce

  1. In a bowl, mix the grated horseradish with salt and cream.

  2. Stir in the vinegar, using chili vinegar if the horseradish is mild.

  3. Place the sauce in a clean saucepan over low heat, stirring continuously until just before simmering.

  4. Do not let it boil to avoid curdling.

What each ingredient does

Horseradish
Provides the sharp, pungent heat that defines the sauce.
Cream
Adds body and mellows the sharpness of the horseradish.
Vinegar
Adds acidity that brightens the flavor and balances the cream.

The step that matters

Heating without boiling. Cream-based sauces can curdle or separate when heated too hard. Warming gently over low heat and stopping before a simmer keeps the cream smooth and the sauce stable.

Swap the horseradish

How well each one fits the dish's main ingredients (cream, vinegar):
