What each ingredient does

Lobster coral
Gives the dressing its rich, savoury flavour and orange colour.
Mayonnaise
Provides fat and creaminess, carrying the coral flavour through the sauce.
Hard-boiled eggs
Add a soft, creamy texture and mild richness alongside the lobster.
Salad herbs or young lettuces
Provide a crisp, fresh base that contrasts with the rich sauce.

The step that matters

Serve immediately. Dressed salad greens wilt and lose their crispness once the mayonnaise-based sauce sits on them, so assembly should be timed just before serving.

Swap the lettuce

How well each one fits the dish's main ingredients (lobster, egg):

  1. Asparagusfits better
  2. Mustardfits about as well
  3. Chivefits about as well
  4. Lettucethe original

Fit is the average pairing score against lobster, egg. Candidates are from the same food group and used in at least 100 recipes.
