What each ingredient does

Fillet of beef
Forms the main body of the dish, cooked whole so it stays tender and juicy.
Butter
Basting fat that adds richness and helps the outside brown during roasting.
Currant jelly
Adds sweetness and a touch of acidity to balance the rich, savoury beef.

The step that matters

Roast the fillet in a brisk fire. Beef fillet is lean and cooks quickly at the surface. A hot, steady heat browns the outside and keeps the centre tender, while too long a roast dries it out.

Swap the currant

How well each one fits the dish's main ingredients (beef, butter, tomato, meat):

  1. Avocadofits better
  2. Coconutfits better
  3. Cherryfits better
  4. Currantthe original
