Why it works: Parsley and watercress match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 469 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
To Roast Pigeons
Ingredients
Directions
Prepare
Remove the heads, necks, and toes of the pigeons.
Draw the pigeons carefully and rinse them with plenty of water.
Wipe the pigeons dry and place a small piece of butter dipped in cayenne inside each bird.
Truss the wings over the pigeons and roast them over a brisk fire.
Roast and serve
Baste the pigeons constantly with butter while roasting.
Roast for about 18 to 20 minutes, or 5 minutes longer if they are large.
Serve with brown gravy and a side of parsley and butter.
For the second course, serve on a bed of young watercress.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Young pigeons
- Provide the main meat, which cooks quickly over high heat to stay tender.
- Butter
- Adds moisture and richness, and basting helps keep the birds from drying out while roasting.
- Cayenne pepper
- Adds gentle heat that flavours the butter as it melts inside the birds.
- Brown gravy
- Adds savoury moisture and depth to the served pigeons.
The step that matters
Roast for the right time. Pigeons are small and lean, so overcooking dries the meat quickly. Checking at the stated time, and allowing a few extra minutes for large birds, helps keep them juicy.
Swap the parsley
How well each one fits the dish's main ingredients (butter, pepper, watercress):
- Capersfits about as well
- Parsleythe original
- Tarragonfits about as well
- Thymefits less well
Fit is the average pairing score against butter, pepper, watercress. Candidates are from the same food group and used in at least 100 recipes.
