What each ingredient does

Cucumbers
Their crisp flesh forms the bulk of the dish, and salting draws out water to firm them.
Salad oil
Coats the slices, carrying flavor and giving a smooth, rich mouthfeel.
Chili vinegar
Adds acidity and sharpness that cut through the oil and brighten the cucumber.

The step that matters

Drain the water by tilting the dish. Salt draws water out of the cucumber slices, and that liquid dilutes the dressing if it is not poured off before the oil and vinegar go in. Pouring it off first keeps the seasoning concentrated and the slices crisp.

Swap the cucumber

How well each one fits the dish's main ingredients (pepper, vinegar):

  1. Capsicumfits better
  2. Mustardfits better
  3. Cabbagefits better

Fit is the average pairing score against pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
