Mince Pies Royal

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. In a bowl, combine mincemeat, powdered sugar, lemon rind, lemon juice, clarified butter, and egg yolks, then beat well together.

  2. Line pattypans with fine pastry and fill them more than half full with the mixture.

Bake and ice

  1. Bake in a 350°F (175°C) oven until the insides are just set.

  2. In another bowl, beat egg whites until stiff peaks form, then quickly mix in powdered sugar.

  3. Ice the pies thickly with the egg white mixture and return to the oven.

  4. Bake slowly until the icing is a fine light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mincemeat
Provides the main filling, adding sweetness, spice and moisture to the pies.
Egg yolks
Enrich and bind the filling, helping it set firm when baked.
Egg whites
Whipped into a meringue-like icing that bakes to a light, crisp brown topping.
Clarified butter
Adds richness and fat, giving the filling a smooth, tender texture.
Powdered sugar
Sweetens the filling and dissolves into the whites to stabilise the icing.

The step that matters

Baking the icing slowly. Egg white icing can brown too fast or weep if the oven is too hot. A slow bake dries and sets the meringue evenly while it turns light brown.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (sugar, butter, egg):

  1. Vanillabetter flavor fit
  2. Lemonthe original
  3. Raisinabout as good a flavor fit
  4. Figabout as good a flavor fit

Fit is the average pairing score against sugar, butter, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
