What each ingredient does

Eggs
Bind the batter and add richness and structure as the pudding sets.
All-purpose flour
Provides the starch and gluten that give the pudding its body and firmness.
Beef suet
Adds fat that keeps the pudding moist and rich during long cooking.
Bread crumbs
Absorb moisture and lighten the batter, giving a softer crumb.
Raisins
Add sweetness and chewy texture throughout the pudding.

The step that matters

Pour the mixture into a well-floured cloth. The floured, hot-water-dipped cloth forms a protective skin on the pudding, so it holds its shape and does not stick or fall apart while boiling for hours.

Swap the ginger

How well each one fits the dish's main ingredients (flour, bread, beef, raisin, nutmeg, egg, milk):
