A Good Sponge Cake Pudding

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Slice the sponge biscuits and place them in a well‑buttered tart dish.

  3. Add the candied rind on top of the biscuits.

Make the custard

  1. Whisk the eggs thoroughly.

  2. In a saucepan, heat the milk and dissolve the sugar in it.

  3. Grate in the lemon rind and let the mixture cool slightly.

  4. Stir in the brandy while the mixture is still warm.

Bake and serve

  1. Pour the mixture over the sponge biscuits and let it sit for 1 hour.

  2. Strain the clarified butter over the top.

  3. Sprinkle with powdered sugar.

  4. Bake for 45 minutes or longer until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard into a tender, sliceable structure as they cook.
Milk
Provides the liquid that gives the custard its moisture and softness.
Sponge biscuits
Soak up the custard and form the cake-like body of the pudding.
Sugar
Adds sweetness and helps the top brown lightly as it bakes.
Clarified butter
Adds fat for richness and a smooth, rich mouthfeel.

The step that matters

Bake for 45 minutes or longer until set. Egg proteins set with heat, so baking until just set keeps the custard smooth. Overbaking makes the eggs tighten, curdle and turn rubbery.

Swap the orange

How well each one fits the dish's main ingredients (biscuit, egg, milk, sugar, lemon, brandy, butter):

  1. Vanillafits better
  2. Figfits better
  3. Apricotfits about as well
  4. Orangethe original

Fit is the average pairing score against biscuit, egg, milk, sugar, lemon, brandy, butter. Candidates are from the same food group and used in at least 100 recipes.
