Why it works: Lemon and orange match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 10,634 recipes mention both. Both carry 3-hexenal, which smells apple, fruity. The science ↓

Very Fine Orange Jelly

Ingredients

Directions

Prepare the isinglass

  1. Soak 2 ½ ounces of isinglass in 1 pint of spring water until moistened.

  2. Heat the mixture over gentle heat until the isinglass dissolves, skimming off any scum after 2-3 minutes.

  3. Set the dissolved isinglass aside to cool.

Make the syrup and combine

  1. In another pot, boil 1 pound of sugar in 1 pint of spring water for 5-6 minutes.

  2. Pour the syrup into a bowl.

  3. Add the thinly pared rinds of 2 lemons, 2 Seville oranges, and 2 China oranges, along with the juices of 5 China oranges, 2 Seville oranges, and 3 lemons when the syrup is just warm.

  4. Combine the mixture with the liquid isinglass.

  5. Strain the combined mixture through a fine sieve or muslin.

Mould and unmould

  1. Pour the strained mixture into molds placed in cold water.

  2. Loosen the jelly by wrapping the molds with a cloth dipped in boiling water.

  3. Run a knife around the edges of the molds.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

  1. Lemon + orangetop 1% of all pairs
    Aroma overlapstrong
    Mentioned together10,634 recipes

    Shared aroma: 3-hexenal (apple, fruity).

  2. Sugar + lemontop 18% of all pairs

    Shared aroma: 2-nonenal (fatty, green).

  3. Sugar + orangetop 20% of all pairs
    Aroma overlaplow
    Mentioned together19,212 recipes

    Shared aroma: beta-damascenone (apple, rose).

Sugar and lemon share little aroma chemistry, yet 53,532 recipes mention both: they likely work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm jelly as it cools.
Highly refined sugar
Sweetens the jelly and adds body to the set.
Seville oranges
Provide bitter-sharp citrus flavour from juice and aromatic oils from the rinds.
China oranges
Provide sweet citrus flavour and aroma from juice and rinds.
Lemons
Add acidity that brightens the flavour and balances the sugar.

The step that matters

Strain the combined mixture through a fine sieve or muslin. Isinglass and citrus pulp can leave cloudiness and bits in the set jelly. Straining removes solids so the jelly becomes clear and smooth.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (sugar, orange):

  1. Vanillabetter flavor fit
  2. Lemonthe original

Fit is the average pairing score against sugar, orange. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
