Apricot Blanc-mange, or Creme Parisienne

Ingredients

Directions

Prepare the base

  1. Dissolve the isinglass in the milk or cream and strain it through a folded muslin.

  2. In a clean saucepan, combine the strained mixture with the sugar and bring to a boil.

  3. Stir in the rich cream gradually.

Finish and set

  1. Add it to the apricot jam by the spoonful, mixing smoothly.

  2. Stir until nearly cold to prevent the jam from sinking to the bottom.

  3. Add lemon juice to enhance the flavor.

What each ingredient does

Isinglass
Sets the mixture as it cools, giving the blanc-mange its firm, sliceable body.
Sugar
Sweetens the base and balances the tartness of the apricot jam.
Rich cream
Adds richness and a smooth, velvety texture to the set dessert.
Apricot jam
Provides the main apricot flavour, colour and fruit character.
Lemon juice
Adds acidity that brightens the apricot flavour.

The step that matters

Stir until nearly cold. The jam is dense and will sink if the mixture stays liquid. Stirring while it cools and thickens keeps the jam evenly suspended through the set dessert.
