Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and a smooth, soft body once set.
Isinglass
Gelatine-like setting agent that firms the cream so it holds its mould shape.
Sugar
Adds sweetness and balances the sharpness of the lemon juice.
Lemon juice
Supplies acidity and bright flavour, and thickens the cream as it is whisked in.

The step that matters

Dissolving the isinglass without boiling. Isinglass is a gelatine-like setting agent that can lose its setting power if overheated. Keeping the mixture just below boiling dissolves it fully so the cream sets firm in the mould.
