Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the chestnuts for 7 to 10 minutes.

  2. Wipe them dry.

  3. Cut a small slit in the rind of each chestnut.

Roast and serve

  1. Roast the chestnuts in a coffee roaster or in a Dutch oven at 400°F (200°C) for 10 to 15 minutes.

  2. Serve the hot chestnuts in a napkin with coarse sea salt on the side.

What each ingredient does

Chestnuts
Their starch turns partly to sugar when roasted, giving a sweet flavour and a soft, mealy texture.

The step that matters

Cutting the slit in the rind. Steam builds up inside the shell as the chestnut heats. A small slit lets it escape, so the shell does not burst in the oven or roaster.
