What each ingredient does

Coriander seed
Provides the main aromatic, citrusy body of the blend.
Black pepper
Adds sharp, pungent heat that lingers on the palate.
Cayenne pepper
Supplies capsaicin, giving the blend its fiery heat.
Fenugreek seed
Contributes a bittersweet, maple-like aroma typical of curry blends.
Turmeric
Gives the powder its yellow colour and earthy flavour.

The step that matters

Drying the mixture before the fire. Turning it often lets moisture escape evenly. Any residual moisture left in the powder can encourage mould or caking during storage, so it should be fully dry before cooling and bottling.
