Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Scale, wash, and dry the herrings well with a cloth.

  2. Mix black pepper, a few cloves, and plenty of coarse sea salt.

  3. Rub the mixture all over the fish.

  4. Lay the herrings straight in a pot and cover them with vinegar.

  5. Add a few bay leaves and tie strong paper over the top.

  6. Bake in a moderate oven at 350°F (175°C).

  7. Serve hot or cold.
