Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobsters
Provide the main meat, which sets the flavour and texture of the pie filling.
Butter rolled in flour
Flour and butter thicken the strained shell liquor into a richer, smoother sauce.
Puff pastry
Forms a flaky, golden crust that seals and browns over the filling.
Bread crumbs
Add a light topping layer that helps the crust bake and brown evenly.
Vinegar
Adds a sharp acidity that brightens the shell broth and balances the lobster's sweetness.

The step that matters

Bake in a slow oven until the crust is done. A slow oven lets the filling warm through gently so the lobster stays tender, while the pastry browns. Baking too hot can toughen the lobster and burn the crust before the filling heats.

Swap the mace

How well each one fits the dish's main ingredients (lobster, vinegar, pepper, butter, flour, bread):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against lobster, vinegar, pepper, butter, flour, bread. Candidates are from the same food group and used in at least 100 recipes.
