Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down into a smooth mash that thickens the soup and gives it body.
Baked flour
Absorbs the butter and onion juices, then thickens the liquid as it hydrates.
Butter
Adds richness and carries the onion's flavour into the soup.
White onion
Provides sweet, savoury aromatic flavour as it softens in the butter.

The step that matters

Cook the onion until tender but not browned. Browning the onion adds bitter, toasted notes that change the soup's clean flavour. Gentle softening draws out sweetness while keeping the colour pale.

Swap the onion

How well each one fits the dish's main ingredients (potato, butter, flour):

  1. Chivefits better
  2. Leekfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against potato, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
