Why it works: Apple and cinnamon are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 5,598 recipes. Both carry methyl cinnamate, which smells strawberry. The science ↓
Apple Dumpling
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Make the pastry
In a bowl, mix the minced suet with the flour and salt.
Gradually add cold water to form a dough.
Roll out the dough to about ½ inch thick.
Assemble the dumpling
Butter a quart basin and line it with the rolled‑out paste.
Core and quarter the apples, packing them closely in the basin.
Add a handful of brown sugar and a pinch of cinnamon or ginger when half full.
Fill the basin with more apples, adding more sugar and seasoning on top.
Cover with the remaining paste and wet the edges with egg to seal.
Butter a pudding cloth, sprinkle with flour, and cover the basin tightly.
Cook and serve
Boil in a pan of boiling water for 2 hours or bake in the oven at 350°F (175°C) for 1 hour.
Let it stand for 10 minutes, then turn it upside down to serve.
Serve with cream in a sauce‑tureen.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Forms the dough structure that holds the apples and sugar together while cooking.
- Beef suet
- Adds fat that keeps the crust tender and rich as it cooks.
- Apples
- Provide the main filling, softening as they cook and releasing moisture into the pastry.
- Brown sugar
- Adds sweetness and a caramel note to the apples.
- Egg
- Acts as a sealing wash that binds the pastry edges closed.
The step that matters
Sealing the edges. If the egg-wetted edges are not pressed firmly together, steam and syrup can escape during boiling or baking, leaving the filling dry or the dumpling open and collapsed.
