Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Separate the yolks from the whites of the eggs.

  2. Beat the yolks with the ground sugar.

  3. Add the flour and flavor with lemon, orange, or vanilla sugar.

  4. Fold in the whipped cream gently.

  5. Beat the egg whites until stiff and fold into the mixture.

Bake and serve

  1. Pour the mixture into saucers or tins.

  2. Sprinkle fine sugar on top and bake at 400°F (200°C) for about 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, while yolks add richness and help set the batter.
Ground sugar
Sweetens the batter and dissolves into the yolks for a smooth, tender crumb.
Flour
Provides the structure that holds the light batter together as it bakes.
Cream
Adds moisture and richness, and folded in whipped it keeps the batter airy.

The step that matters

Fold the stiff egg whites in gently. Stiff egg whites hold air bubbles that give these pancakes their lift. Stirring or deflating them vigorously knocks out that air, so the pancakes bake flatter and denser.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, flour, cream):
