Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Break the eggs into a pan with the sugar.

  2. Beat over a stove until very stiff and light.

  3. Remove from heat and continue beating until cold.

  4. Add the essence of lemon.

  5. Gently mix in the flour.

Bake

  1. Drop the mixture into greased and sugared pans.

  2. Bake in a slow oven at 300°F (150°C) for about 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped into a stiff foam that gives the sponge its light, airy structure.
Fine ground sugar
Sweetens the cake and helps stabilise the whipped egg foam.
Flour
Provides the set structure that holds the cake once baked.

The step that matters

Gently mix in the flour. Folding rather than stirring keeps the air trapped in the whipped eggs. Overmixing knocks out that air and produces a dense, tough sponge.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against egg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
