Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Oyster Omelet

Ingredients

Directions

Prepare

  1. Scald the oysters in their liquor, then chop them into 4 pieces each.

  2. In a small bowl, mix the yolks of the eggs until creamy; add parsley, pepper, salt, milk, and chopped oysters, mixing thoroughly.

  3. Beat the egg whites until stiff and gently fold them into the yolk mixture.

  4. Melt all the butter in a frying pan, pour about 2 teaspoons into the egg mixture, and mix.

Cook and serve

  1. Pour the mixture into the frying pan and cook over medium heat until it begins to set without stirring.

  2. Shake the pan and gently slide a knife around the edges to ensure it doesn't stick.

  3. When set and yellow underneath, hold it briefly in front of the fire to set the top, then fold it over.

  4. Turn it out onto a hot dish and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites add lift and the yolks set into a tender, custardy structure.
Oysters
Provide the main savoury flavour and moist, tender bites throughout the omelette.
Butter
Adds richness and helps prevent sticking while the omelette cooks in the pan.
Milk
Adds moisture and softness to the egg mixture for a more tender texture.

The step that matters

Folding the whites into the yolks. Stiff whites hold air that gives lift; overmixing or stirring deflates them, leaving a dense, flat omelette. Fold gently with a spatula so the air is kept.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, egg, butter, milk, pepper):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Cinnamonfits less well
  4. Tarragonfits less well

Fit is the average pairing score against oyster, egg, butter, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
