Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard and whites, folded in, lighten its texture.
Cream
Whipped, it forms a light, airy topping that adds richness.
Sponge cakes
Soaked base layer that gives the pudding its body and absorbs the custard.
Strawberry jam
Adds fruity sweetness and flavour between the cake and custard.
Sugar
Sweetens the custard and, with the cream, the topping.

The step that matters

Stir the custard over low heat without boiling. Egg yolks thicken as they warm, but if the custard boils they can scramble and curdle, leaving a grainy texture instead of a smooth custard.

Swap the strawberry jam

How well each one fits the dish's main ingredients (sugar, lemon, egg, cocoa, cream):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Strawberry jamthe original

Fit is the average pairing score against sugar, lemon, egg, cocoa, cream. Candidates are from the same food group and used in at least 100 recipes.
