Ingredients

Directions

Prepare the chestnuts

  1. Remove the outer rind from the chestnuts and soak them in warm water until it is too hot to touch.

  2. Peel the chestnuts quickly and place them in cold water.

Make the soup

  1. Weigh ¾ pound of chestnuts for each quart of soup and cover them with stock.

  2. Stew the chestnuts gently for about 45 minutes, or until they break easily with a fork.

  3. Drain and mash the chestnuts smoothly.

  4. Pass the mash through a fine sieve.

  5. Gradually mix in the stock until desired consistency is reached.

  6. Season with mace, cayenne, and salt, stirring often until it boils.

  7. If using, stir in the cream before serving.

What each ingredient does

Spanish chestnuts
Provide starch that cooks soft and mashes into the body of the soup.
Good stock
Supplies the main liquid and sets the final thickness and savoury flavour.
Rich cream
Adds fat for a smoother, richer mouthfeel and softens the flavour.

The step that matters

Peel the chestnuts quickly while warm. As chestnuts cool, the inner skin clings more tightly and becomes harder to remove. Peeling while they are still warm keeps the job quicker and leaves fewer bits of skin in the soup.

Swap the chestnut

How well each one fits the dish's main ingredients (mace, cream):

  1. Pistachiofits better
  2. Almondfits better
  3. Walnutfits about as well
  4. Chestnutthe original

Fit is the average pairing score against mace, cream. Candidates are from the same food group and used in at least 100 recipes.
