Modern Cookery
Ingredients
Directions
Fill a pot with enough water to completely cover the fish.
Add a portion of the salt to the water and bring it to a boil.
Once boiling, skim off any scum and add the fish.
Boil the fish for 3 to 10 minutes, depending on its size and thickness.
Pour in an equal amount of cold water to the boiling water.
Remove some water, leaving enough to keep the fish covered.
Add the remaining salt and reduce the heat to maintain a simmer until the fish is cooked.
